How to Sear on a Grill

    • 1). Remove the steaks from the refrigerator and season them to your preference. Let the steaks rest at room temperature for 20 minutes. Do not pierce the meat, as this will cause moisture loss.

    • 2). Preheat your grill to a high temperature, roughly 400 degrees Fahrenheit. A charcoal grill will show barely grey coals. Wipe the heated grill grate with a thin coat of vegetable oil.

    • 3). Place the steak on the grate for 1 to 2 minutes, just long enough to create grill marks and sear the outside. Turn the steak over to sear the opposite side. Do not disturb the steak during the 1 to 2 minutes per side that creates the sear marks.

    • 4). Turn the grill's heat down to medium, or move the steak to a cooler part of the coals to finish cooking. Cook the steak to your preferred doneness.
