Definition:
Elotes are roasted or boiled ears of corn, smeared with butter, topped with cheese, salt, lime juice and chili powder. Sometimes mayonnaise is used in lieu of butter. Elotes usually sold on a stick, steaming hot, by Central American street vendors.
