How to Serve Wild Boar Prosciutto
- 1). Wrap scallops in strips of boar prosciutto. Pan-sear them in clarified butter until just cooked through, then drizzle them with a few drops of white truffle oil. Serve as an appetizer, or add a salad and crusty bread to make a light lunch.
- 2). Slice the boar prosciutto paper-thin. Serve with delicate spring greens, skinned orange segments, toasted walnuts and a mustard-based vinaigrette.
- 3). Serve thin slices of boar prosciutto as an accompaniment to wine or a richly flavored craft beer, along with nuts, strong cheese and dried fruit. The flavor of the boar stands up to more potent accompaniments than a traditional pork prosciutto.
- 4). Crisp several thin slices of boar prosciutto in a skillet, and crumble them over a creamy pasta dish as a flavorful garnish. Alternatively, use the prosciutto to make a carbonara sauce. Toss cooked pasta with the crumbled prosciutto, beaten egg, and enough of the cooking water to make a creamy texture. Finish the dish with shredded Parmesan.
