Beer Batter Recipe for Rock Cod
I just got back from a fishing trip to the north coast of California in the little town of Gualala.
Now, Gualala is a tiny town, but, there is a lot of outdoor fun to be had there.
On this particular trip, we were once again fishing for California rock cod.
Gualala is sort of a home away from home for myself and a few fishing buddies of mine, we've been fishing up here for the past 30 years or so.
Sometimes, we do a little salmon fishing or even a little crabbing, but mostly, we're fishing for rock cod on this part of the coast.
Over the years, a friend of mine sort of refined a beer batter recipe for rock cod.
I say "sort of reined a beer batter recipe" because, while he does use a box of beer batter mix, he doesn't actually mix it into a batter, but, I'll explain that later.
First, let's talk about the equipment we will be using and then we'll move on to the ingredients.
Equipment: Bayou Classic 2212 Aluminum Fish Cooker Kit.
The aluminum fish cooker kit includes a high pressure burner on a 19 inch tall frame, a 10-quart aluminum fry pot with a perforated fry basket, and a 5 inch thermometer.
I really like this fish cooker kit.
It gives you everything you need to deep fry, boil or steam your favorite foods.
We are also going to need about 3 quarts of vegetable oil.
Always choose an oil with a high smoking point when deep frying foods.
For this operation I will usually use Canola oil.
Ingredients: 1) Rock cod fillets, sliced into 2 to 3 inch strips.
2) At least 1 can or bottle of your favorite beer.
3) Scrambled egg batter.
The number of eggs depends on how much fish you intend to fry.
4) One box of beer batter mix.
Instead of actually mixing the beer batter, we are going to use the beer batter mix as flour.
This gives you a much lighter coating on the fish, so you taste more of the fish and less of the batter.
Prepare your rock cod: 1) Fillet your rock cod and remove the rib cage.
2) Cut your fillets into 2 or 3 inch strips.
Keeping your pieces of fish approximately the same size helps ensure that all are properly cooked.
3) Soak your fish strips in a bowl filled with the beer of your choice.
Soak time should about ½ hour to an hour.
4) Dip your fish pieces in egg batter.
5) Coat the fish in the flour from a beer batter mix.
Now you are ready to deep fry your rock cod.
Pre-heat the oil to 350 degrees and carefully set your fish pieces into the pot.
You don't want to overfill your pot with fish, so, just fry 3 to 6 pieces at a time, depending on the size of your pot.
Cooking time is only about 3 to 4 minutes so pay attention.
They will be a nice, crispy, golden brown when they are done.
You can serve them up with a tartar sauce, a cocktail sauce, or make fish tacos with them.
If you have any leftovers, they go great on a green salad.
