Seasoning for Lamb Roasts
- 1). Trim and discard any fat on the outside of the roast.
- 2). Chop any large pieces of herbs and spices into small pieces, using a sharp knife and chopping board. Mix the spices together.
- 3). Rub the mixture of seasonings into the lamb roast, using your fingers.
- 4). Cover the roast with plastic wrap or place it into an airtight container. Leave the seasoned roast in the refrigerator overnight.
- 5). Pull the lamb roast from the refrigerator a half hour before you are ready to put it into the oven. Let it rest at the room temperature. This allows the lamb to cook evenly throughout.
- 6). Place the roast on a roasting rack in a roasting pan. This also allows for a more even cooking temperature through the whole roast. For the first 15 minutes, cook the roast in a preheated oven of 450 degrees Fahrenheit. This will give the roast a crusty outer surface and seal in the meat's juices. Then, lower the oven to 350 degrees Fahrenheit. Cook it for 25 minutes for every 1 lb.
