    • 1). Cook your pumpkin seeds. Recipes vary, but typically require roasting the seeds at 325 degrees Fahrenheit for 20 minutes. Whether you roast them in an oven or in a skillet, you must stir them occasionally. The seeds are done when golden brown.

    • 2). Transfer the hot seeds to a bowl to cool. If you let them cool on the cooking surface, they will absorb more heat and start to burn. You can use any kind of bowl, but the seeds will cool off more quickly in a metal bowl. Metal bowls conduct heat effectively, while ceramic bowls are better insulated and will keep the seeds hot longer. Let the seeds cool at room temperature; it's a waste of energy to stick them in a fridge or freezer.

    • 3). Store the cooled seeds in an airtight container. They should keep for 3 months at room temperature or 1 year in the refrigerator.
