Lebanese Hamburgers
About me I am of Lebanese American descent.
I have fond summer memories of my Uncle grilling hamburgers on his little Hibachi.
These were the most flavorful hamburgers in the world! While, I don't have his exact recipe this is as close to the flavors of those warm summer nights as I can remember.
I believe I will make these tonight! Lebanese Hamburgers also called kafta, Mediterranean burgers, in Arabic Aras Lahim 1 1/2 tsp.
ground cinnamon 1 1/2 tsp.
paprika 1/4 tsp.
cayenne pepper, or to taste 1 1/2 tsp.
salt 1 1/21bs.
lean ground lamb or beef 3 Tbsp.
cold water 2 large onions, cut lengthwise in half and thinly sliced 2 firm, ripe medium tomatoes, sliced Lebanese bread, pita bread, halved or sesame seed hamburger buns chopped parsley Yogurt Sauce with Garlic and Mint Below 1.
Combine spices, mix well, and set aside.

In a large mixing bowl, combine meat, cold water and 1 1/2 tsp.
spice mixture, onion.
Mix and knead well until blended and smooth.

With moist hands, form mixture into six patties.
Set aside.
4.
In a large heavy skillet, melt 3 Tbsp.
of butter over moderate heat.
5.
Arrange tomato slices over onions and over them pour any juices remaining in skillet.
Return to warm oven while cooking meat.

Broil meat patties, preferably over charcoal.
If using charcoal.
Make sure coals are well charred over.
You should be able to hold your hand over the heat for 10 seconds without having to pull away.
7.
Fill each bread half with meat patty a few slices of tomato and some onion.
Sprinkle with parsley.
8.
Spoon Yogurt Sauce into each sandwich.
Variation: Of course you can have your burgers the traditional way with ketchup, mustard, raw onion etc.
Yogurt Sauce with Garlic & Mint 4 cups plain yogurt or Greek style yogurt 2-3 cloves garlic 1/2 tsp.
salt 2 Tbsp.
dried mint crushed 1.
Mash garlic with salt.
For this step you can do this on a cutting board and make a "garlic paste" with the salt.
Use the side of a knife to chop garlic with salt and continue mashing together until you get a smooth paste.

Add yogurt and mint.
Combine all into a serving bowl.
The Hibachi can be so fun to grill on.
Shish Kabobs work great on the grill too! This summer bring the whole family together.
