1Choose the proper oil for your recipe. Different fats and oils require different cooking times and produce different results.

Pour in oil. Check to see if there is a "max" fill line or read the manufacturer's directions to determine the correct amount of oil for your deep fryer. For most recipes, you want enough oil to immerse the food.

Set the temperature. Most home-use deep fryers are countertop electrical appliances. You simply turn a knob or push buttons on digital models to heat the oil.

Wait until the oil is the correct temperature before adding food. Use a thermometer if your fryer doesn't let you know when the oil is ready.

Add food carefully. If your fryer has a basket, you can put the food in the basket and lower it with a handle or you can use a slotted spoon to lower the food into the oil, just make sure you remove the spoon.

Watch the clock. Deep frying is a fast cooking method. Whole turkeys can cook in as little as 45 minutes, so know the cook time for your recipe and your deep fryer.

Use the basket or slotted spoon to remove the food from the oil.
