>>Almond Baked Fish 1 1/2 teaspoons lemon juice 1 1/2 teaspoons butter or margarine, melted 1/4 teaspoon salt 4 flounder fillets or other fish fillets (about 1 pound) 1/3 cup mayonnaise 1/2 cup saltine cracker crumbs 3 tablespoons butter or margarine, melted 2 tablespoons slivered almonds Combine first 3 ingredients in a 12x8x2 inch baking dish.
Arrange fish in dish; spread mayonnaise over fish.
Combine cracker crumbs, 3 tablespoons melted butter and almonds; sprinkle over fish.
Bake at 400 degrees for 10 to 15 minutes or until fish flakes easily when tested with a fork.
Yield: 3 to 4 servings.
>>Lemon Barbecued Catfish 1/4 cup commercial barbecue sauce 1/2 teaspoon grated lemon rind 1 1/2 tablespoons lemon juice 1 1/2 pounds catfish fillets Combine first 4 ingredients; stir well.
Brush each side of fillets with sauce and place in a lightly greased 12x8x2 inch baking dish.
Brush on remaining sauce.
Bake at 350 degrees for 25 minutes or until fish flakes easily when tested with a fork.
To serve, place fillets on a serving platter.
Yield: 6 servings.

) shredded mozzarella cheese Arrange flounder fillets in a lightly greased 13x9x2 inch baking dish; sprinkle with oregano and pepper.
Pour spaghetti sauce over fillets; sprinkle with parsley.
Bake, uncovered at 350 degrees for 20 minutes or until fish flakes easily when tested with a fork.
Top with cheese; bake an additional 5 minutes.
