How to Make Strawberry Daifuku
Today, I'm going to bring you a treat that is immensely popular in Japan as a dessert or as a snack.
It is called strawberry daifuku, which means sweet red bean strawberries covered in mochi.
It's a good way to taste the fresh strawberry's sweetness by complimenting it with another sweet item and another item that has a great texture to go along with the strawberries.
Here is how to make strawberry daifuku.
The ingredients that you are going to need are: a handful of strawberries, premade anko (Japanese word for sweet red beans), mochi coat, sugar, katakuri starch, and water.
First prepare the strawberries.
Wash them and cut off the stems.
Once you have done that you can leave them aside for now.
Next take your premade anko, and depending on the amount of anko, split it into 4 to 6 pieces and round them into balls.
Then take the balls one by one and flatten them into a thin circle, and put the strawberry point down into the center, and wrap the anko around it so that the strawberry is completely covered on all sides.
Do this to the remaining strawberries and cover them with a vinyl wrap so as to keep the strawberries moist.
Next we are going to make our dough.
Take your mochi coat and mix it together with water and sugar.
Keep mixing until the mixture is even with no lumps.
Then take a steamer and steam the mixture for about 15 minutes on high heat.
Once the dough is done, take it out (it's hot), and put the dough on a cooking pan that's layered with katakuri starch.
Once you have done that, cover the dough itself and your hands with some starch and do the same process you did for the anko.
Divide it into 4 or 6 even pieces and cover your anko covered strawberries until it is completely covered in white dough.
Now simply cut and serve to your guests.
