How to Can Chicken Broth
- 1). Sterilize the jars and lids by running them through the dishwasher.
- 2). Fill the large pot with water and add pieces of chicken. Bring the water to a boil
- 3). Add seasonings such as salt and pepper, or garlic. If you are adding vegetables, add those as well during this step.
- 4). Simmer for 1 hour.
- 5). Remove the chicken pieces with a slotted spoon. Remove the chicken from the bone and break the bones into smaller pieces. The bones get brittle enough to break after sitting in boiling water.
- 6). Put the bones back into the large pot and simmer for eight to 10 hours.
- 7). Strain the liquid to remove the bones or any vegetable chunks.
- 8). Pour the broth into the jars. Leave 1 inch of space at the top.
- 9). Secure the lids to the jars and place them in the pressure canner.

Process the jars for 10 to 25 minutes depending on your altitude. Consult the instructions that came with your pressure cooker for high-altitude instructions. - 11
Remove the cans from the pressure cooker and allow them to cool. - 12
Store the cans in a cool, dark place. Pressure canned foods last for years when stored in the right conditions.
