 Pistachio Orange Rocky Road is a great twist on the usual Rocky Road recipe. Instead of walnuts or almonds, this recipe calls for lots of pistachios and a big handful of candied orange peel. The salty nuts and chewy, tangy peel are the perfect contrast to the chocolate and marshmallows. Plus, the bright orange and green colors make this one gorgeous candy!

Ingredients
  • 9 oz (1 1/2 cups) chopped semi-sweet chocolate or chocolate chips
  • 2 cups miniature marshmallows
  • 1/2 cup salted shelled pistachios, coarsely chopped
  • 1/4 cup candied orange peel, store-bought or homemade, chopped

  • Prep Time: 20 minutes


  • Total Time: 20 minutes
  • Yield: 1 lb


Preparation

1. Cover a baking sheet with foil or parchment paper. Place the chocolate in a medium microwave-safe bowl and microwave in 30-second intervals. Stir after every 30 seconds to prevent overheating, and continue until the chocolate is completely melted and smooth.

2. Add the marshmallows and most of the pistachios and chopped orange peel, reserving out about 2 tablespoons of each of the pistachios and peel to use as decorations.

3. Scrape the candy out onto the prepared baking sheet and smooth it into an even layer with a spoon or spatula. Sprinkle the remaining pistachios and peel over the top of the candy and press down gently to adhere them to the chocolate.

4. Refrigerate the tray until the chocolate is hard and set, then cut it up into small pieces or break it up by hand. Store Pistachio Orange Rocky Road in an airtight container in the refrigerator for up to a month, and bring it to room temperature before serving.
