How to Chit Potatoes

    • 1). Rub off all but 3 or 4 of the biggest buds, or eyes, of each seed potato from the rose, the end with the most buds. Do not wash or rinse the potato. You can easily rub off the smaller buds with your fingers.

    • 2). Cut off approximately a 2-oz. portion of the rose, with the remaining tubers. Discard the rest of the potato. Place the chit, or saved portion of the potato, cut side down on the cardboard egg tray. This allows optimal air circulation to harden the cut and prevent the development of disease. Store in a cool area for 6 weeks, or until the weather allows you to plant.

    • 3). Plant the chits, cut side down, between 3 and 5 inches deep in loose soil. Space them 10 to 12 inches apart in rows spaced between 30 and 36 inches apart. Water and fertilize as needed, and watch your potato vines grow in expectation of the savory spuds' harvest.
