Are you trying to practice living on the cheap, downscaling, cutting back, or just making ends meet? You are in good company lately.
So many of us have been either laid off or had wages reduced that we are just trying to get by until the economy improves.
One of the quickest ways to keep some cash in your piggy bank is cutting back on food.
Our food budget is actually one of the few areas of our monthly expenses that are a variable expense.
Cut back on the food budget while eating well and you'll have a lot more cash at the end of the month.
Here is a list of cheap, yet healthy items to eat when trying to cut back on your food expenses: Beans.
Good old humble beans in any form are about as cheap as it gets.
Substitute a pound of beans for a pound of meat once a week and save $4- $6 off your grocery bill.
Be sure to use dried beans rather than canned to maximize savings and nutrition.
Eggs.
Yes, ounce for ounce eggs are still a good source of protein for the money.
I make a quiche every once in a while to cut back on the amount of meat we are using.
Quiche is a filling meal that is a wonder for using up leftover vegetables and meat in the fillings.
Be creative and willing to try different combinations of ingredients.
If you are worried about cholesterol, you can eat 2 egg whites to 1 whole egg and end up with roughly the same nutritional content as egg substitute with about a third of the cost.
Potatoes.
We have stuffed potatoes once in a while to help us use up the leftovers of vegetables and meat in the fridge.
Top with butter, cheese and whatever else you may have around.
Again, creativity is key and you will discover a whole host of new favorites.
Leftovers.
Don't overlook what you already have around; just make it into something else to avoid boredom.
