What Is in Cream of Chicken Soup?
- The easiest way to make cream of chicken soup is to mix four parts chicken stock with one part heavy cream. Salt, white pepper, ground nutmeg, and chopped parsley or chives may be added for seasoning. Heat the soup without ever bringing it to a boil.
- For a thicker cream of chicken soup, melt four tablespoons of butter, and add four tablespoons of flour. Stir in the four cups chicken stock and one cup heavy cream and then season to taste.
- Adding three beaten egg yolks or a few tablespoons of almond flour will produce an even richer cream of chicken soup.
- Of course, cream of chicken soup can also include finely chopped pieces of cooked chicken. Two to three cups worth is the standard amount.
- Other common ingredients in cream of chicken soup include cooked white rice, chopped celery, chopped onion, garlic, parsley, thyme, and black pepper.
