Nutritious Bean Recipes for Children

Kids love pizza and it's a perfect way to sneak nutritious foods into their diets. They also love Mexican food. This recipe combines two of their favorite types of food into one delicious, yet healthy recipe.
1 packaged whole wheat pizza crust
1 cup salsa (freshly prepared is great, but low-sodium will work)
1 cup shredded Mexican blend cheese
1 can low-sodium black beans, rinsed
4 Roma tomatoes, seeded and chopped
1 red onion, chopped
Fat-free sour cream, optional
1.Top whole wheat pizza crust with salsa, cheese, beans, tomatoes, and onion.
2.Bake according to pizza crust package directions.
3.Top with sour cream, if desired. - Serves 1
This recipe is perfect for school lunches or even a summer lunch at home. This recipe is also very easy to change with different vegetables and sauces. The key is to choose ingredients children like. This recipe can also easily be increased for more servings.
1 whole wheat pita pocket
½ cup canned low-sodium beans, rinsed
½ cup romaine lettuce, chopped
1 Roma tomato, chopped
½ of a large cucumber, sliced
¼ cup green onions, chopped
2 tbsp. fat-free ranch dressing
1.Split the pita bread and open the pockets.
2.Toss the rest of the ingredients together and place in the pockets.
3.Serve with fruit salad. - Serves 2
Many kids haven't yet realized that peanuts are actually beans. That's great, though, because they love them. More specifically, they love peanut butter. This recipe is perfect for kids because it's fun, healthy and delicious.
8 vanilla wafers
4 tbsp. all-natural peanut butter
1 banana sliced into eight pieces
3 oz. semisweet chocolate, melted
1.Place the vanilla wafers on a nonstick cookie sheet.
2.Top each vanilla wafer with ½ tbsp. of peanut butter and a slice of banana.
3.Use a spoon to drizzle chocolate over the bananas and freeze until firm.
4.Allow to defrost for five to 10 minutes before serving.
