Chicago Fizz
The Chicago Fizz is a classic mixed drink that, as the name indicates, found its origins in the Windy City. Who or how this particular fizz came into creation is probably lost to history, but we do know that sometime before Prohibition it traveled the country and was served in the bar at the Waldorf-Astoria.
This is a rich, eye-opening fizz with dark rum and ruby port as the base. If you prefer you may skip the egg white, though you'll find it looses some of its silky appeal. Also, while bottled club soda will do, it as, as any fizz is, best with soda from a good, old-fashioned soda siphon.

Ingredients
- Prep Time: 4 minutes

Preparation
- Pour all ingredients, except the soda, into a cocktail shaker filled with ice.
- Shake well and strain into a chilled collins glass.
- Top with club soda (or better yet, soda from a siphon)
