How to Trim Fat in a Pork Shoulder
- 1). Set the meat on a cutting board with the section of fat facing up. Pinch the fat layer between your forefinger and thumb. Pull the fat away from the meat until it almost starts to separate on its own, making a tag of fat in your pinched fingers.
- 2). Position the knife blade between the pork fat you are holding and the meat. Pull the tag of meat in your fingers while slicing down. Tilt your knife toward the layer of fat so it does not cut too far into the meat.
- 3). Keep pulling the fat taut as you cut it away. Slice slowly down the meat until a strip of fat comes off. After a strip of the fat layer is removed, start again from the top. When a whole layer of fat is removed continue to cut the meat as you desire.
