    • 1). Wash the pans before you cook in lukewarm, soapy water. Avoid pre-seasoning the pan.

    • 2). Adjust the heat to a lower temperature than you would normally use while cooking. Set it on high only when you are boiling water or otherwise reducing liquids. Use medium for saute and frying and low heat for warming foods or making sauce.

    • 3). Use butter and other oils just to flavor food, since they're not needed to grease the pan. Avoid using metal utensils (especially forks) on the calphalon surface. Use only wooden, coated or plastic utensils on the pans.

    • 4). Allow your pan to cool before washing it. Remove any oily residue after cooking. Use a sponge or soft bristle brush, not steel wool, to clean any grease off of the calphalon. Only use dish detergent, such as Dawn, to clean the pan.
