If you know that a certain quest demands a specific kind of leather, you could sell it at an Auction House near that place.
This is the case for Rugged Leather that would be in-demand at Gadgetzan, where a horde quest nearby can only be completed with a certain amount of that kind of leather.

Don't sell all your items yourself.
If you're skinning borean leather, and have found a spot, where there's lots of it, send it to a bank alt to sell it.
The same is the case for any kind of ores and even herbs.
If you sell them yourself, you risk that your competitors will do a simple search and find out, where you spend your time farming.
This could mean the end of a profitable business for you.
However, even if you're not afraid of giving away your little secrets, you'll save time by sending your leather, ores or herbs to an alt, so you can stay in the area and do more gathering.

Make sure you know where to gather the items that you can sell.
Don't rely just on questing in that area.
Often, it pays out big time to go to other areas to farm the items that really sell.
