Ingredients Required

Open cup mushrooms - 16 no. (evenly sized, cut the stalks to level)

Vegetable oil - 3 tablespoons

Butter - 75 g (Unsalted and softened)

Garlic - 3 cloves (very finely chopped)

Fresh thyme - 2 tablespoons (chopped)

Lemon Juice - 1 tablespoon

Salt - To taste

Black pepper - To taste (freshly grounded)

Breadcrumbs - 50g (fresh)

Steps

1. Preheat the oven to 400o F.

2. Gently fry the mushrooms in hot vegetable oil with cap side down for about 20 seconds.

3. Take a shallow roasting tin and arrange all the mushrooms with their stalks facing upwards.

4. In a separate container mix the butter, thyme, garlic, lemon juice, salt and black pepper together. Apply a spoon of this mix onto each mushroom and then gently press the breadcrumbs on the top. If you want to use it later on, you can refrigerate this preparation. If you want to use straight away, cook immediately for about 10 minutes in the preheated oven.
