How to Peel a Difficult Hard Boiled Egg

1Use eggs that are a minimum of 3 days old, and 5 to 7 days old is even better. If you know you'll be needing beautifully peeled hard boiled eggs, buy your eggs about a week ahead of time.

Remove the eggs from the refrigerator and let them warm to room temperature before you boil them. Don't drop the eggs in the boiling water, but start with cool water and let the water and eggs heat together.

Allow the boiled eggs to soak in ice water for a few minutes before you peel them. Doing so will help the eggs to separate from the shell, making them easier to peel.

Try lightly tapping both ends of the boiled egg on your counter, cracking the ends. Lay the egg on its side and roll it gently with the palm of your hand so the entire shell is cracked. The shell will slide off easily.
