Kitchenaid mixer attachments

The first attachment we are going to look at is the gourmet pasta press, If you love to make pasta you can produce great homemade pasta with this attachment, it can create a whole range of shapes both short and long. In the set you will find Spaghetti, Bucatini, Fusilli, Macaroni and Rigatoni.   The steel plates that come with this attachment are made very well, they have a stainless steel front and they separate into 2 pieces allowing you to clean them easily.

They sit in a clear plastic case that clips to the front of the gourmet pasta press, this is great because it keeps all the pieces centralised. Its best to hand wash these plates.   Now to put it together is actually simple, you start by unscrewing the round white plastic cap at the bottom of the attachment, next take the auger (shaped like a drill bit) which is also white plastic and locate the cross on its base. You line up the cross on the auger's base with the cross inside the attachment then simply insert and turn and it will lock into place. You will hear an obvious "click" when it locks in.   Next you choose a steel plate and press it firmly in place at the bottom of the attachment, now take the round white plastic cap you unscrewed and screw it back on, hand tight is fine. Now just remove the attachment hub cover on the front of your stand mixer and insert the gourmet pasta press, you will feel it lock in place, lastly tighten the attachment hub thumb screw to secure everything.

The second kitchenaid mixer attachments we will have a look at is the ice cream maker. You can easily turn you're kitchenaid stand mixer into an ice cream dream machine with this fun attachment, you can easily make 2 quarts of you're favourite ice cream, frozen yogurt, or sorbet in you're kitchen and it only takes about 25 minutes with this unique attachment, It's also great fun for making with the kids.   

Two useful points to note are you must place the ice cream bowl attachment into the freezer for 12-15 hours before using (overnight) and the attachment makes 2 Quarts of ice cream but it is recommended to make 1 for the first 1 or 2 mixes.    

The third kitchenaid mixer attachments we will have a look at is the fruit and vegetable strainer. And the fourth and final kitchenaid mixer attachments will will look at is the ravioli maker. To use the Ravioli Maker attachment on your stand mixer you first need to prepare the pasta dough sheets using the pasta sheet roller attachment, to make this process easier dust the sheets with a little flower.  

Fold your pasta sheet in half and insert the folded end between the rollers, separate the two loose ends of the pasta sheet and drape each end over the smooth metal rollers. It's important that the pasta sheets are uniformly thick and wide and that you centre them when you feed them into the rollers, now rotate the handle one quarter of a turn to feed the sheet into the rollers, now find the slight indentation on one side of the rim of the hopper, place the indented side so that it faces the attachment knob side of the stand mixer.  

Place the hopper on top of the dough sheet and push down until you hear a click, using the provided scoop, spoon 1 or 2 scoops of filling into the hopper, spread the mixture evenly into the corners of the hopper and press down gently on the filling with the scoop. Now slowly turn the handle while making sure that the ravioli strips are feeding freely through the bottom of the attachment.  

This process is manual and not powered by the stand mixer, add more filling to the hopper as needed, pressing down and evening out with the scoop each time you need more. Make sure that all of the filling in the hopper is used before the end of the pasta sheet is reached or the filling will collect on the rollers. Now place your strips of ravioli on a lightly flowered surface and let them dry for about 10 minutes, now separate and cook.
