Types of Rice Pudding

    Southeast Asia

    • There are many types of rice dishes found throughout Southeast Asia which closely resemble rice pudding. Many of these have heavy Chinese influences, and as such they are called rice porridge, as they are in China. There are two distinct versions of rice porridge in Southeast Asia. One form is cooked so that the rice grains become indistinguishable from the others, and the second is cooked so that the rice grains still are whole. Regardless how it is prepared, thin and lightly marinated slices of fish often are added to it, along with cilantro and red chili peppers. Pickled vegetables and fermented soy beans always are served alongside.

    Middle East

    • Food historians believe it was the Middle East that first developed rice pudding, originally including not just rice but additional grains, as well. Today's rice pudding in the Middle East often includes saffron, anise and ginger, as well as dried or fresh dates and apricots. It still is widely enjoyed in this area as both a dessert or entrée, and can be prepared either sweet or savory.

    Europe

    • Rice pudding in Europe often contains cinnamon. Other regional variations include the addition of poppy seeds in Eastern Europe, while the southern regions tend to include dried fruits and nuts. In Sweden, rice pudding is a part of a traditional Christmas meal, whereas in Iceland it is more mundane and often served with raisins. Rice pudding is exceedingly popular in the United Kingdom and is served both at home tables and fancy restaurants.

    Latin America

    • Rice pudding is arguably the most common dessert in Latin America. Rather than the traditional milk, rice pudding often is made with coconut milk, as well as a variety of exotic spices like cloves and ginger, or vanilla. Adding cinnamon also is popular. It is not unusual for the leftovers to be served for breakfast.

    North America

    • Rice pudding came to North America with the immigrants from Europe, but lately is has become more similar to the Latin American form of rice pudding with the inclusion of cinnamon or cloves. Northeastern states sweeten the rice pudding with maple syrup, while Southern states usually just flavor it with vanilla. This dessert once again is becoming popular and is appearing on restaurant menus.
