Preparation
You'll need 4 large cloves of peeled garlic and a quart (1 liter) good quality red or white vinegar. Put the cloves in a wide-mouthed glass jar and crush them against the sides of the jar with a fork. Add the vinegar, cover, and set the vinegar in a dark place. Let it steep for 10 days, giving it a good shake once daily. At this point strain it, filter it if need be, and bottle it.
