    • 1). Thaw pie shells slightly by placing in the oven at 350 degrees Fahrenheit for a few minutes while you prepare the recipe.

    • 2). Combine sugar, corn starch or flour, milk and butter in a saucepan.

    • 3). Bring to a gentle boil over medium heat, stirring constantly with a whisk.

    • 4). Remove from heat and slowly add in the beaten eggs.

    • 5). Add vanilla extract, rum (optional) and coconut.

    • 6). Remove pie shells from the oven and pour the filling evenly between the two pie shells.

    • 7). Place the pies in the oven at 350 degrees Fahrenheit for 35 to 40 minutes.

    • 8). Remove the pies from the oven and let cool thoroughly.

    • 9). Spread whipped cream over the tops of both pies to finish; place in the refrigerator.
