How to create a simple southern coconut pie
- 1). Thaw pie shells slightly by placing in the oven at 350 degrees Fahrenheit for a few minutes while you prepare the recipe.
- 2). Combine sugar, corn starch or flour, milk and butter in a saucepan.
- 3). Bring to a gentle boil over medium heat, stirring constantly with a whisk.
- 4). Remove from heat and slowly add in the beaten eggs.
- 5). Add vanilla extract, rum (optional) and coconut.
- 6). Remove pie shells from the oven and pour the filling evenly between the two pie shells.
- 7). Place the pies in the oven at 350 degrees Fahrenheit for 35 to 40 minutes.
- 8). Remove the pies from the oven and let cool thoroughly.
- 9). Spread whipped cream over the tops of both pies to finish; place in the refrigerator.
