Video: Roast Beef Sandwich Garnishes

Hi, my name is Maria Sparks with Cork and Platter, and today I'm going to show you some roast beef sandwich garnishes. The first one we're going to do is a little, I've made a little horseradish blue cheese sauce. For this sandwich we're just going to drizzle it over the roast beef. You can put as much or as little as you want and then we just simply sprinkle it with some chives that I snipped. I use a little knife but you can snip these with scissors too and you just put a little bit on the top like that, really simple, beautiful, really flavorful. That's number one. Number two is our Mediterranean. We use a little feta cheese. For each sandwich or crostini I would say you can put about a tablespoon of feta. Feta is pretty strong, it's salty, it does its thing. You don't need too much. So a tablespoon of feta and then some chopped peppers. You can do them plain or you can roast them. I roasted these and this is the equivalent of about a quarter of a red, a quarter of a yellow and a quarter of a green pepper and we're going to top that with a few olives. For a sandwich, I would say if you were going to do this for an appetizer I would just put two or three slices of olives. If you're going to do it in a slider, maybe slice two olives and put it in there and spread it out, chop it up. The third one we're going to do is the American and it's got, we've got a little bit of garlic mayonnaise. It's simply one tablespoon of mayonnaise with half a garlic clove crushed and put in there, a little bit of salt and a little bit of white pepper and then we take our bacon and you just place it on top. If you're going to do this on a crostini, I would use about a tablespoon of bacon and I would chop it up even smaller so when people go to bite into it the bacon is really nice and small and then I would top this with our caramelized onion. If you want to top it even more to give it some color, you can add a small sprig of parsley. If you're going to put it on a slider, you don't need to have the parsley, that's just for visual and our last one is sort of an Argentinian version and in this we have our chimichurri sauce and chimichurri is made with parsley, thyme, olive oil, we use rice wine vinegar, salt and pepper and we put this in a blender and just blend it all up. It's kind of like a pesto, a little healthier and there's no cheese in it either. And then we top it with some black olives and then some slices of red onion. And there you have it. I've just shown you how to make four roast beef sandwich garnishes.
