    • 1). Rinse the roast thoroughly under running water.

    • 2). Pat it dry with paper towels.

    • 3). Cover the roast thoroughly and evenly with oregano, onion, black pepper and garlic.

    • 4). Preheat the oven to 450 degrees Fahrenheit.

    • 5). Place the roast in the dutch oven.

    • 6). Insert the roast into the oven and oven sear it for 10 minutes.

    • 7). Reduce the heat to 275 degrees Fahrenheit and cook for 30 minutes per pound or until a meat thermometer inserted into the deepest part of the roast reads 145 degrees Fahrenheit. If desiring a medium to well-done roast, cook it to 160 degrees Fahrenheit.

    • 8). Remove the roast and let it sit, covered with aluminum foil, for 20 minutes before carving.
