Summer Garden Gazpacho Recipe
This recipe serves six.
Ingredients:
12 Roma tomatoes
1 fennel, diced
1 red bell peppers, seeded, diced
4 stalks celery, diced
2 cucumber
1/2 bunch parsley
1/2 cup sherry vinegar
1/2 cup olive oil/lime oil
1/2 Queen Creek Mexican Lime Oil
salt, to taste
6 squash blossom
1 cup all purpose flour
Preparation:
For gazpacho: Puree all vegetables in blender with sherry vinegar, slowly add olive oil to emulsify, when emulsified, add herbs and puree well. Season to taste with salt. Strain through Chinois.
For the squash blossom: dip the squash blossom in flour, and fry in a sautee pan with a small amount of oil until crisp.
To plate: Place gazpacho in a small bowl, place the fried blossom in the middle and float small amount of oil over the top.
