Orange Pound Cake
In a medium bowl beat 2/3 cup of sugar, 1/2 cup of butter, and egg yolks at medium speed until light and fluffy. With the mixer at low speed, add the self-rising flour, alternating with milk , beginning and ending with flour.
With clean beaters, beat egg whites until stiff but not dry; fold the egg whites and 4 teaspoons of orange zest gently into the batter; pour into greased and floured 13x9x2-inch baking pan.
Bake at 375° for 20 to 25 minutes or until golden brown.
Cool, cut into squares and serve with warm orange sauce.
Sauce:
In small saucepan mix together 2/3 cup of sugar, cornstarch, and salt; pour the boiling water over mixture, stirring constantly. Cook over medium heat until mixture boils and thickens.
Add 1 teaspoon of butter, 4 teaspoons of orange zest, and orange juice.
Makes about 12 to 18 servings.
